In Zulia produce meat with supplies for repair

With the processing plant that was given to them by the Unit for the Victims, the government of Norte de Santander and the Municipality of the municipality, they achieved their first production of sausages and blood pudding.

The women victims of the municipality of El Zulia, Norte de Santander, belonging to the subject of collective reparation Amuci, took out the first production of sausages using part of the supplies and the machinery that the Victims' Unit gave them in association with the Government and the Town hall.

The project of the meat processing plant, the pigs and the farm where animals and machinery are located, was part of the reparation for this group in which the entities of the National System of Attention and Integral Reparation to Victims (SNARIV) invested more of 700 million pesos. 

In the long term, the objective is that they can sell wholesale all the products that are processed in the plant. For the time being, tests were scheduled to make adjustments to the teams and achieve the positioning of the entrepreneurs in this project.

"Three were sacrificed, out of the first 40 animals that were given to start the business. With this meat we can say that started the business with which they can grow as entrepreneurs, "said Alvaro Vargas, director of the Victims Unit in Norte de Santander and Arauca.

Carlos Galvis, the professional delegate for the government to accompany them in these first steps, explained that in the first test 85 kilos of meat were obtained, part of which was used to obtain 460 chorizos and 150 black puddings.

"With the exception of the smoker machine, which needs control in the flame, all the equipment was used to make the final product, that is, in the cold room the meat matured 72 hours, then the cutting or cutting was done by pieces and the ingredients were mixed to achieve the sausage that was then packed in the stuffer, "said the animal production engineer.

With this product, the women of Amuci opened a sale at the municipal headquarters, also received in the repair process, where they sold chorizos, blood sausages and carcasses to those who came to support their project, among them Governor William Villamizar, the mayor of Zulia and the director of Unit, Álvaro Vargas.

"It was a success," Galvis said. They want to produce a particular chorizo, that's why the tests are important. For this step there is a food engineer that accompanies the process from the government”

The flagship product has already been named, "the sausage repair", and although it is in the process of being prepared, the victims of El Zulia have already begun to glimpse a new future for themselves and their families.
